I have been slowing transitioning to a vegan diet, so most recipes I will be posting will be geared in that direction.
I love to bake and cook and this is where I like to keep all the fantastic recipes I find on tumblr.

I try to never post anything with out a recipe. It makes me mad when I see something yummy looking and can't figure out how to cook it!



Vegan Nachos Supreme 

THE BEST NACHOS OF MY LIFE. These were so delicious yesterday, that I had to make them again! I remembered to take a few photos pre-oven and post-oven and I added a few modifications. These nachos will definitely not disappoint. (Serves 2 people for a meal, 4 people for a snack)

  • 3 big handfuls thick corn tortilla chips 
  • 2 cups soy/daiya shredded cheddar jack cheese
  • 1/2 block firm tofu chopped
  • 1/2 cup chunky salsa
  • 1/2 cup black beans
  • 1/2 cup vegetarian refried beans with jalepeño
  • 1 medium, ripe avocado mashed
  • 1 tomato chopped
  • 1/4 tsp salt
  • 1/2 tsp olive oil
  • 1/4 cup sliced black olives
  • Squeezed lime juice (optional)
  1. Preheat oven to 400°F.
  2. Place half the chips on a large oven-safe plate. Cover with 1/2 cup cheese.
  3. Cover layer with remaining chips and 1/4 cup cheese.
  4. Stir black beans and refried beans in small bowl. Spread evenly over layer.
  5. Stir tofu and salsa in small bowl. Spread evenly over bean layer.
  6. Sprinkle dish with 1/4 cup cheese.
  7. Bake in oven for 10 minutes until cheese is melted.
  8. Remove from oven. Spread avocado over top.
  9. Sprinkle with tomatoes, olive oil, salt, and olives.
  10. Devour before they disappear!
